Fresh and Delightful Harry Salad
We went to Bobby Van’s three times so I could eat this impeccably perfect salad. It’s called the Harry Salad, though I can’t find whom--or what--it’s named for. I have never had anything so delectable--and such a simple recipe, too!
INGREDIENTS
Equal parts per person/serving
Chopped Shrimp
Chopped Spring Beans
Tomato (Which I skip because I’m not a fan)
Red Onion
Roasted Red Pepper
Feta Cheese
Bacon
Dress in a shallot vinaigrette
This Shallot Vinaigrette recipe is from Martha Stewart:1 small shallot, peeled, finely minced (about ¼ cup)
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
¼ cup extra-virgin olive oil
Coarse salt and ground pepper
DIRECTIONS
Mix salad ingredients
In a small bowl, whisk together shallot, vinegar, mustard, and honey. Slowly whisk in oil until well combined. Season with salt and pepper
Toss salad and dressing together
