Fresh and Delightful Harry Salad

We went to Bobby Van’s three times so I could eat this impeccably perfect salad. It’s called the Harry Salad, though I can’t find whom--or what--it’s named for. I have never had anything so delectable--and such a simple recipe, too!


INGREDIENTS

Equal parts per person/serving

  • Chopped Shrimp

  • Chopped Spring Beans

  • Tomato (Which I skip because I’m not a fan)

  • Red Onion

  • Roasted Red Pepper

  • Feta Cheese

  • Bacon

  • Dress in a shallot vinaigrette


    This Shallot Vinaigrette recipe is from Martha Stewart:

    • 1 small shallot, peeled, finely minced (about ¼ cup)

    • 2 tablespoons red wine vinegar

    • 1 tablespoon Dijon mustard

    • 1 tablespoon honey

    • ¼ cup extra-virgin olive oil

    • Coarse salt and ground pepper


DIRECTIONS

  1. Mix salad ingredients

  2. In a small bowl, whisk together shallot, vinegar, mustard, and honey. Slowly whisk in oil until well combined. Season with salt and pepper

  3. Toss salad and dressing together
